▪️Recipe Notes for This Year

[ Red & White Namasu]

▫️Ingredients
・Daikon radish … 340g
・Carrot … 111g
・Salt … 1 tsp
・Yuzu peel … a small amount

▫️Seasoning Mix
・Water … 150cc
・Rice vinegar … 150cc
・Sugar … 50g
・Kombu (dried kelp) … about 5cm

▫️Notes
・Light sweetness, just the right balance
・Using less yuzu works better for kids
・This year, peel the daikon a little thinner than before

[Chikuzen-ni]

▫️Ingredients
・Chicken thigh … 2 pieces (about 550g)
・Dried shiitake mushrooms … 7
・Burdock root … 1
・Carrot … 1 + decorative-cut carrot
・Lotus root (decorative cut) … about 200g
・Taro … 10 small
・Konjac … 200g
・Snow peas … 8
・Sesame oil … 1 tbsp

▫️A (Simmering Broth)
・Shiitake soaking liquid … 800cc
・Soy sauce … 80cc
・Mirin … 80cc
・Sugar … 3 tbsp

▫️Notes
・Lightly seasoned when freshly made, better from the next day
・A big hit with the family
・Dried shiitake works better than fresh

[Matsukaze-yaki]

▫️Ingredients
・Ground chicken thigh … 300g
・Finely chopped vegetables … about 100g
・Poppy seeds, aonori (green laver) … as needed
※Sesame seeds can be used instead of poppy seeds

▫️A
・Sugar … 1/2 tbsp
・Sake … 1/2 tbsp
・Soy sauce … 1/2 tbsp

▫️B
・Egg … 1
・Miso … 1/2 tbsp
・Mirin … 1 tbsp
・Soy sauce … 1 tbsp
・Sugar … 1 tbsp
・Salt … a pinch

▫️Notes
・Sautéing the meat first helps it keep its shape without shrinking
・Using leftover decorative-cut vegetables improves texture and flavor
・Can become salty, so season lightly

[Shrimp Balls]

▫️Ingredients
・Shrimp (headless) … 8 (120g)
・Hanpen (fish cake) … 1 sheet (100g)
・Onion … 1/4
・Salt … 1/4 tsp
・Potato starch … 1 tbsp
・Colorful rice crackers (arare) … 50g
・Vegetable oil … as needed

▫️Notes
・Delicious when freshly made, but reheating is needed the next day
・Needs improvement for next year

[ Roast Beef]

▫️Ingredients
・Beef block … 600g (bring to room temperature)
・Salt … 1 tsp
・Black pepper … 1 tsp
・Olive oil … 1 tbsp

▫️Notes
・Use 75°C hot water
・A cut with less fat works better
・Searing each side for 1 minute gives the perfect doneness, tender and juicy
・Easy and reliable, this method never fails
・For parties, rubbing the meat with grated garlic works well

[Simmered Head-On Shrimp]

▫️Ingredients
・Head-on shrimp … as needed

▫️For Parboiling
・Water … 1 L
・Sake … 1 tbsp
・Salt … 1/2 tsp

▫️Seasoning
・Katsuobushi dashi … 400cc
・Sake … 2 tbsp
・Mirin … 2 tbsp
・Light soy sauce … 2 tbsp
・Sugar … 2 tbsp

▫️Notes
・Once the seasoning comes to a boil, lower the heat, add the shrimp, and simmer for 5 minutes
・Turn off the heat and let cool in the liquid to absorb the flavor

    6年前に子供達のお弁当作りが🍱終わって料理にヤル気がでないが続いてる毎日。
    当時は色んな方のを🍱🍳観てました。
    shizukiさんの料理は全力で頑張ってた当時を思い出します。
    手法も似ていて親近感。
    夫婦2人の生活なので当時のような馬力は出ませんがお節の動画を見て決心☺️
    今年の暮は手作りしてみます!!
    申し訳ないのですが市販の物よりお母さんの味が1番だ!と動画を見ていて感じました。
    (帰省していた娘が市販のお節を食べて?の顔になってたので😅)

  13. I was really enjoying the channel, until you put performing monkeys on there !! don't you think it's about time we as human beings stop exploiting animals and using them for rubbish like this, how unfortunate that this channel has to put vile pictures on it.
