Healthy Black Vinegar Glazed Pork & Veggies|Takoyaki & Monjayaki|Bear Pie & Matcha Latte

Hello (^^) I came to the next town to listen to my daughter’s chorus competition. Lunch is a croissant Getting taiyaki as a reward for her hard work My recommendation is the okonomiyaki taiyaki Also picked up some bento snacks at Daiso Bought some tasty rice crackers too Heading back home I secretly bought taiyaki for myself too, so I’ll reheat and eat it Lunch was light, so I’m a bit hungry A new mug joined the collection I’d been looking for a heat-resistant mug for a while Finally found a really cute one Having black soybean tea with taiyaki Of course, Totoro helps me out ^ ^ I’m so happy that so many of you liked this Totoro I forgot which episode I made it in lol I remember spending quite a bit of time making it ^ – ^ It’s the season of art, and I feel like making new friends soon The okonomiyaki taiyaki has a rich flavor and tastes amazing In Japan, there’s something called the “taiyaki personality test” Apparently your personality can be told by how you eat taiyaki lol I’m the type who eats from the head It says that means an easygoing optimist lol That’s so accurate ( ^∀^) How about you? Which side do you start from? ^ ^ My shio-koji ran out, so I’m studying how to make a delicious batch It’s a chilly rainy morning Today’s bento is pork and vegetables with black vinegar glaze I’m making a big batch because I want to eat it too First, making yakisoba as a side dish The stir-fried vegetables will be mixed later That’s the secret to keeping them crisp Lightly season the pork with salt and pepper I microwaved the noodles (600W, 30 sec) with the inner bag on Since Maruchan’s official recipe microwaves it in the inner bag So I microwave it that way too, with peace of mind Crispy veggie yakisoba, all done Maybe I should’ve added some bell pepper… Second side dish is butter soy-sauce enoki bacon Bacon and enoki are the perfect combo Drawing out the flavor from the bacon Add butter and sauté until softened Finish with a drizzle of soy sauce I wanna try making it with all sorts of mushrooms Wanted some green, so sautéing green beans Sautéed with sesame oil Seasoned only with salt and pepper Perfect as a light side dish Pork and vegetable black vinegar glaze It’s a pork version of Ootoya’s popular dish Soaking in water The pork version is just as delicious Lotus root is soaked in vinegar water Using black vinegar and plenty of vegetables Gives it a kind of healthy image Found a little baby sleeping inside the paprika!! Roughly chopping the vegetables into big pieces One lady pepper snuck into the mix Ootoya uses green beans But bell peppers or shishito peppers work too I want some green in there Eggplant is roughly chopped into large pieces Yam has its hairs burned off and cut with the skin on Sweet potato and carrot were microwaved at 600W for 5 minutes Microwaving firm root veggies saves time Deep-frying the vegetables one after another My favorite, yam—love its crisp texture Lotus root was microwaved for 3 minutes Preparing white rice Since everything is pre-cooked, it fries quickly With black vinegar dishes tending to look plain, Color is really important Coating the pork with potato starch I like it a bit crispy, so I cooked it longer Cutting larger pieces of meat Got a good amount of lard Mixing the sauce 6 tbsp black vinegar, 2 tbsp apple vinegar, 1 tbsp sake,
2 tbsp mirin, 2 tbsp soy sauce 2 tbsp sugar, a bit of honey, 2 tbsp water, 2 tsp potato starch Simmer for about 3 minutes until thickened Return the vegetables and meat, coat them with the sauce With so many ingredients to fry, it takes some patience If you want it quick and healthy, microwaving works too My son often has morning classes, so today again, it’s rice balls They’re mixed with salted kelp, tempura bits, aonori,
sesame, mentsuyu, and sesame oil He loves the squid tempura bits The freshly made ones have crispy tempura bits and taste so good Breakfast is quattro formaggi-style toast Looked it up and it means “four kinds of cheese” So I made sure to use all four kinds Loaded with honey I actually wanted to add blue cheese too But it seems too soon for the kids (´ω`) Leftover frozen meal prep from last week I followed Ootoya’s recipe Feels like eating at Ootoya (^^) Not sure why they share their recipes, but I’m really grateful for it ❤️ Pork and vegetable black vinegar bento complete Wrapping it with a wish that it’ll taste good Today’s snack is chocolate dorayaki Dividing up the rest of the frozen meal prep The leftovers will be tonight’s dinner This week’s bentos are all set Dinner is takoyaki and monjayaki When I see roots, I feel like growing them It was hard in summer, but now that it’s cooler, maybe it’ll be fine Burning off the hairs on the yam It had thin hair, so the treatment was done quickly My daughter came to help Kind of sloppy lol Water 1200ml, 3 eggs 1 packet of powdered kelp broth, 1 packet of powdered bonito broth 150g rice flour, 3 tbsp potato starch Should’ve mixed the flour and eggs first ( ¯▽¯ )💦 Looks like it’s going to get lumpy… Added soy milk too Now making the batter for monjayaki 30g rice flour, 1 tbsp shirodashi, 2 tbsp Worcestershire sauce Cutting the octopus into preferred sizes Lately, a cat has been visiting the garde The sound of the bell means it’s nearby My daughter came to sneak a bite of octopus She’s also curious about the cat Cutting the mochi into small cubes Preheating the hot plate Spray bottle makes oiling easier Refilling it since it ran out Using refined sesame oil (taihaku) Preparing the monjayaki Topped with small shrimp and tempura bits Today’s version is chicken ramen monja Pour the batter up to about 80% full Add octopus, tempura bits, and green onions Pour in the rest of the batter until it almost overflows Stuffing the overflow back into the main batter Second round The octopus pieces were a bit too big this time The batter is creamy thanks to the yam Waited a bit too long, and the tempura bits soaked up the batter My son is in charge of cooking the monja He builds a wall and pours the batter inside Green onion–loaded takoyaki The monja was left unattended.., Finishing it up in a hurry Cooking egg whites on the side Lemon soda goes perfectly with takoyaki He’s a takoyaki master So good at grilling them The trick seems to be flipping after the bottom is nicely browned They’re round and look delicious (*´﹃`*) Round three includes mochi and cheese inside Takoyaki outdoors is great, but homemade ones enjoyed slowly at home are just as good Crispy outside, creamy inside The next day Making the “sleeping bear pie” I’ve been curious about Using MUJI beet sugar biscuits My daughter joins in too Breaking the chocolate bar along the grooves Slightly stretching out the giant puff pastry blanket Poking holes for air vents Divided it into eight pieces Placed chocolate and laid the bear on top Covering it with the blanket from below Maybe the blanket was a bit too small Pressing the edges with a fork to shape it Placing them on the baking tray Mixing 1 tsp of water into egg yolk to coat the blanket Baking at 180°C for 15 minutes in a preheated oven Preheated at 200°C for about 5 minutes (roughly 😅) The white chocolate got completely burnt (T_T) Making matcha latte to go with the snack Added 4g of matcha to 100cc of water heated to 65°C Using a milk frother instead of a chasen Whenever I make matcha, I always end up wanting the chasen set…(´ω`) Filled the milk up to about 80% Poured the matcha over the ice A beautiful two-layer matcha latte is ready I’m working on my recipe notebook She’s doing her homework I followed MUJI’s official recipe It’s an easy and cute snack to make, highly recommend Even the bears with bad sleeping posture look adorable A pinch of konpeito candy The puff pastry I left out got all limp, Made a giant blanket version After tasting it, I realized it’s better with two pieces of chocolate inside Have a good day〜 Everyone’s sleeping so nicely Thank you for watching till the end

◻︎Ingredients (Serves 2–3)

【Main Ingredients】
• Pork (any cut you like) … as needed
• Vegetables (such as onion, bell pepper, carrot, eggplant, wood ear mushrooms, etc.) … as needed
• Cooking oil … as needed (for sautéing)

【Black Vinegar Sauce】
(Note: I doubled the amounts below when I made it)
• Black vinegar … 2 tbsp
• Apple cider vinegar … 1 tbsp
• Sake (rice wine) … 1 tbsp
• Water … 1 tbsp
• Sugar … 3 tbsp
• Soy sauce … 2 tsp
• Mirin … 2 tsp
• Potato starch … 1 tsp (dissolved in an equal amount of water to make a slurry)

⬜︎Monjayaki Batter

◻︎Ingredients (for 1 batch)
• Rice flour or all-purpose flour … 30g
• Shiro-dashi (Japanese soup base) … 1 tbsp
• Worcestershire sauce … 2½ tbsp
• Water … 300ml

⬜︎Takoyaki Batter🐙

◻︎Ingredients (Serves 4)
• Rice flour or wheat flour … 150g
• Potato starch … 3 tbsp
• Eggs … 3
• Bonito powder … 1 packet (approx. 5g)
• Kombu dashi powder … 1 packet (approx. 5g)
• Salt … 1/4 tsp
• Water … 1200ml
• Minced pickled red ginger … to taste

  9. Is kelp dashi powder the same as kelp powder? I notice you use kelp powder in some of your recipes. I use Kayanoya kelp dashi powder, and I'm looking for others ways to cook with it.
